BETTER YEAR

Hi,
   It has been a really tough year, what with the torn rotatercuff surgery and the the spiral fracture of my femur which has put me in a wheelchair . I am finally learning to walk again with a walker..it hurts but no pain no gain.
   Started working on my painting

I'm  not sure
what I'm gonna do with the green space . I'm very happy with the sky.  It's rather wild. Also been working on a hooked rug.  

I'm going to spend the night here with 3 of my girls
Hailie is at a friends . ......we will have sauerkraut and pork for good luck as we watch the ball drop with my fur babies in the comfort of my home   safe

French Onion Soup

1 large onion, yellow or red (I used yellow)
2 thick slices of French bread
3 slices swiss cheese
1/4 tsp. black pepper
3 C. good beef broth
pinch of salt
1 bay leaf
2 T. butter

Melt the butter over med. high heat in a med. size pot. Peel and quarter the onion then thinly slice it. Place the onion in the melted butter, add a pinch of salt and cook, stirring occasionally till caramelized, about 8 - 10 minutes. Add the beef broth, pepper and bay leaf. Bring to a boil, reduce heat to low and cook for 10 minutes. Meanwhile heat the broiler to high and toast both sides of the French bread. Once toasted, set aside. Remove the bay leaf and ladle the soup into oven proof crocks. Place the bread on top of the soup then top each crock with 1 1/2 slices of the cheese. Place the crocks on a baking sheet and place under the broiler for 3-4 minutes until cheese is bubbly and begins to lightly brown. Remove and serve. This recipe is for 2 servings.

Easy Christmas Treat


Ingredients:

  • 24 pretzels
  • 12 caramel squares. halved
  • 3/4 cup semi-sweet or milk chocolate chips
  • 1 tsp coconut oil
  • Christmas sprinkles

Directions:

Preheat oven to 375 degrees.
Start by lining the pretzels out on parchment paper paper.
Put one piece of caramel on each of the pretzels and bake for 4-7 minutes until caramel melts.dip in melted chocolate and add sprinkles

Recipe

  1. ⅔ cupChallenge Unsalted Butter
  2. 3 cupsgranulated sugar
  3. ⅔ cupevaporated milk
  4. 1 cupbittersweet chocolate chips (60% cacao)
  5. 1 ½ cupssemi-sweet chocolate chips
  6. 3 (1.55oz)Hershey's candy bars
  7. 7 ounce jarmarshmallow creme
  8. 1 teaspoonvanilla extract
  9. 1 cupcoarsely chopped pecans
  10. 1 (11oz) bagcaramels, unwrapped
  11. 3 Tablespoonsevaporated milk

Directions

    Spray a 9-inch baking dish with cooking spray. Line with parchment paper.

    Combine caramels and three tablespoons of evaporated milk in a microwave safe bowl. Heat in 30 second increments, stirring in between, until caramel is melted and smooth. Keep warm and set aside.

    Combine butter, sugar, and evaporated milk in a heavy bottomed saucepan.

    Bring to a boil over medium heat, stirring frequently.

    Once at a full boil, continue boiling for 5 minutes, stirring continuously and scraping down sides of pan.

    Remove from heat and stir in chocolate. (I use a whisk to get out all the lumps.)

    Stir in marshmallow creme and vanilla extract.

    Fold in pecans.

    Pour half of the fudge into the prepared baking dish.

    Spoon the caramel over the top, carefully spreading.

    Spoon the remaining half of the fudge on top of the caramel and smooth out the top with an offset spatula.

    Let cool to room temperature and then refrigerate for at least two hours.

    Cut into small squares and serve.

slow and steady

LIFE HAS A WAY OF HUMBLING YOU.
    ever since my accident I have learned to never take anything for granted.. Things you did last year are much harder this year and have to be done differently, and take a lot longer but you can find an alternant way of doing them.  I have to endure the pain and try to strenthen my legs so I can move smoothly with the walker so eventually, hopfully without it. God is on my side so maybe it will happen.  PRAYING
