Great Meal

   My  favorite chef, Jackie made me her version of Cashew Chicken.....she used the recipe that was on my blog the other day.  She added mushrooms, carrots and broccoli....and it turned out so yummy.
Yesterday, the girls were here for the day and I made a pork loin with carrots, potatoes and mushrooms. We had a fun day.  Jackie will be here till Wed. Tomorrow we have Jens pinning and on Wed. we have her graduation. Thur. I Have Harpers guitar show at school. Hailie is taking me to Ocala to watch him.
     Coal had company yesterday.. Rosie, my grandkids new boxer puppy......they played hard.

Graduation


          My oldest daughter will graduate nursing college next week........I has been a long few years, I am really proud of her. She worked full time and has 2 kids , 5 and 17. It was very stressful and hard to study with the young one, I don't know how she could study with the TV for Ryleigh and then the 2 sisters arguing. when Mark wasn't working he took  them out. Jen had a's in all her classes. I am really proud of her, she will make a compassionate nurse. She already has a job. When it came time for clinicals she had to stop working..it will be nice to get a paycheck again. I'm sure she will like that.  Pinning is Tue. and graduation is Wed.

Cashew Chicken




 
i NGREDIENTS
1/2 cup Low Sodium Soy Sauce
1 Tablespoon Rice Vinegar
1 Tablespoon Packed Brown Sugar
2 Tablespoons Oyster Sauce
1/2 teaspoon Toasted Sesame Oil
3 Tablespoons Vegetable Oil
6 whole Boneless, Skinless Chicken Thighs, Cut Into Small Cubes
Kosher Salt To Taste
1 Tablespoon Chopped Garlic
1 Tablespoon Chopped Fresh Ginger
1 whole Green Bell Pepper, Chopped
1/4 cup Sherry Or Chicken Broth
2 Tablespoons Cornstarch
1/2 cup Drained Canned Water Chestnuts, Coarsley Chopped
1 cup Unsalted Cashews (be Sure To Use Unsalted)
2 whole Green Onions, Thinly Sliced
Cooked Rice Or Noodles, For Serving (if Desired
INSTRUCTIONS
In a bowl, mix together the soy sauce, vinegar, brown sugar, oyster sauce, and sesame oil. Set aside.

Heat the vegetable oil in a large skillet over high heat and add the chicken in a single layer. Sprinkle with a small amount of salt, then leave it alone for at least a couple of minutes to give the chicken a chance to brown. When the chicken has turned golden, stir it around so that it can brown on all sides. Throw in the garlic and ginger and stir to combine. Stir in the bell pepper and let it cook for 2 to 3 minutes.

While the pan is still hot, pour in the sherry. Stir it around, scraping the bottom of the pan to loosen all the flavorful bits. Turn the heat to medium-low and pour in the sauce mixture, then mix the cornstarch with 1/4 cup water to make a slurry and pour it in. Stir the sauce for 1 to 2 minutes to thicken, then add the water chestnuts and cashews and stir to coat everything with the sauce, adding a splash of water if the sauce is too thick.

Finally, sprinkle on the green onions. Serve with cooked rice or noodles.

More Updates




Got a golf cart to get around in ,so i venture out of house more. Still not great a walker yet. the  bone healer is working but it's slow , have to use 10 hours a day..... Hailie had prom this month, she looked beautiful, hard to believe she will graduate next year.....Her mom , my Jen graduates nursing school on May 2nd....so very proud of her. It's been a long  Trying time but she got mostly all A's...I think 1 B
Birthday month ,all the kids and grandkids came for a birthday dinner prepared by Jax and her appointed sous chef for the day , Mark.We had chicken and steak fajitas.....it was so good and we had a great day except for getting older.


Time Flies

    Haven't been on for a while.'.'''''things have changed.....'my sweet Cholie passed, she had congestive heart failure and she was suffering. They said they could try to help her but she might die in a week or a few months so I decided to put her to sleep peacefully.

found a cute pup that looks like a bear..............it is a long hair black german shepard I named hime Coal

  He is my best friend,he stays right by my side . I wonder how he will react when hopefully I don't need the w/c anymore. ...
