NEW PROJECTS

    Hi,
Been a beautiful day outside so far, a nice breeze and only going to 85. That's a good break from the 90's. Its been to stinking hot....I finally gave in and went to urgent care today, for my sinus. I couldn't hear out of left ear when I woke today and my eyes were crusty. So I'm on antibiotics and should start to feel better by Sunday.............good cause I have a lot to do for Nov show. 
I have been working on candles and tarts , but I quit till my colored ink gets here to make the labels. I should be here in 3 days. Meanwhile I made a few pumpkins,. and another fall wreath. But today I'm taking a break to give medicine chance to work.






CARAMEL APPLE NACHOS

What are the ingredients in Caramel Apple Nachos?

  • 30 large marshmallows
  • 5 Tbsp butter
  • 35 caramels
  • 1 Tbsp water
  • 4-5 apples, sliced
  • toppings (peanuts, sprinkles, mini chocolate chips, crushed candy bars, etc)

How do you make Caramel Apple Nachos?

  1. Melt the marshmallows and butter in a saucepan over low heat.  Stir periodically until completely melted and smooth.
  2. Combine the caramels and water in a bowl and microwave until melted.  I microwaved mine in 45 second intervals, stirring in between until the caramel was smooth.
  3. Arrange the sliced apples on a plate and pour the caramel and marshmallow mixtures over them.  Add any additional toppings and serve immediately!  Enjoy!

SALTED CARAMEL THUMBPRINTS

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 2 TBSP honey
  • 2 tsp vanilla
  • dash of salt
  • 2 cups flour
  • coarse sea salt, for topping
  • 2 cups pretzels, broken into pieces
  • 14 oz dulce de leche

Instructions

  1. In a mixing bowl, beat butter and sugar until fluffy. Then, add in eggs, honey and vanilla. Beat until combined. Gradually, add in flour and salt and mix until semi firm.
  2. Place dough in the refrigerator for 30 minutes.
  3. Preheat oven to 350 degrees. Line a flat rimmed baking sheet with parchment paper or mats.
  4. Add broken pretzels into a small bowl. Scoop dough and roll into balls about the size of a walnut. Roll dough in pretzel pieces and place on prepared baking sheet approx 1-2 in apart. Gently press your thumb in the middle of the cookie to form a small well.

Ceamy Chicken Casserole


Ingredients for Chicken Casserole :

The ingredients for this recipe are surprisingly simple but they just work [see full printable ingredient list below]:
  • Chicken breast (or chicken tenders)
  • Chicken broth
  • Half and Half*
  • All-purpose flour (or use a GF substitute)
  • Mushrooms
  • Onion – it disappears into the sauce
  • Garlic – don’t skip it
  • Lemon juice – fresh is best

  • How to Make the Best Chicken Casserole:

    1.  Season chicken with salt and pepper and dredge both sides in flour. Heat 3 Tbsp oil in a large skillet over medium/high heat. Once oil is hot, add chicken and saute until golden and transfer to a 13×9 casserole baking dish.
  • 2. Add 3 Tbsp oil along with sliced mushrooms and diced onions and saute until soft and golden. Add garlic and saute another 1-2 min. Spread mixture over the chicken.
  • 3. In a medium saucepan (or in the same pan you’ve been using), melt 3 Tbsp butter. Whisk in 3 Tbsp flour until lightly golden (1-2 min).
    4. Add 1 1/2 cups chicken broth, 1 Tbsp lemon juice, 1/4 tsp pepper, and whisk until smooth. Add 1 cup half & half and bring to a simmer. Season with salt and pepper to taste

PECAN TARTS

I don't remember which aunt made these but they would be on the cookie table at weddings and Christmas gatherings.

1 stick of margarine or butter, softened
1 cup flour
Dash of salt
Blend together cream cheese, margarine, flour and salt. Shape into 24 balls; press each ball into 1 3/4″ muffin tins (press dough in bottom and sides with fingers, do not leave any holes).
Filling:
2 eggs, beaten
1 cup brown sugar
2 Tablespoon margarine or butter, melted
1 teaspoon vanilla
Dash of salt
1 cup pecans, chopped

Directions

Combine eggs, brown sugar, margarine, vanilla, and salt. Mix well (do not beat with beater, or tops will be crusty instead of a nutty one). Divide pecans evenly in pastry shells. Pour filling in shells, filling 2/3 full. Bake at 350 degrees for 20-25 minutes. Cool slightly before removing from pans. Cool on wire rack. Makes 24. “Nutty” rich–a real favorite.

CHERRY BARS

CHERRY BARS FOR A CROWD
For the Bars:
1 1/2 cups butter, softened
3 cup granulated sugar
1 1/2 teaspoon salt
5 large eggs
1 1/2 teaspoon vanilla extract
1 1/2 teaspoon almond extract
5 1/2 cups all-purpose flour
1 1/2 teaspoon baking powder
2 cans (21 oz.) cherry pie filling
For the Glaze:
1 cup confectioner’s sugar
3 tablespoons milk
Preheat oven to 350 degrees F. Line a jelly roll pan (12x17) with aluminum foil. Spray with nonstick spray. Set aside.
In the bowl of your stand mixer, cream together butter and sugar, about 1-2 minutes. Add salt, eggs, and vanilla and almond flavorings and continue stirring until fully incorporated. Add flour and baking powder and mix until just combined. Reserve 1 3/4 cup of dough. Spread/Press remaining dough into the prepared baking pan. Top with cherry pie filling. Drop remaining batter in small pieces over the cherry filling.
Place in the oven and bake for 50-60 minutes or until golden brown. Remove from the oven and place pan on a wire rack to cool completely. Once cooled prepare the glaze. Whisk together confectioners’ sugar and milk until smooth and drizzle over the bars. Cut into 35 squares and serve.
