Easy Kolacky
Ingredients 1 (8 ounce) package cream cheese, softened
1/2 cup confectioners’ sugar
2 cups all-purpose flour
1 (12.5 ounce) can apricot fruit filling (such as Solo(R))
1/4 cup confectioners’ sugar for dusting
Place the cream cheese and butter in a large bowl; beat with electric mixer until smooth and creamy. Beat 1/2 cup of confectioners’ sugar into the butter mixture. Slowly beat in the flour; mix well. Cover bowl and refrigerate at least 3 hours, or overnight.
Preheat an oven to 375 degrees F (190 degrees C).
On a well floured board, roll out chilled dough to 1/8 inch. Use a pizza wheel to cut dough into 2 1/2 inch squares. Spoon approximately 2 teaspoons of filling in the center of each square; do not overfill. Fold opposite corners of each square into the middle to encase dough, pinching dough together in center. Filling should peek out a little at each end. Transfer cookies to an ungreased baking sheet.
Bake the kolacky in the preheated oven until set but not brown, about 12 minutes. Remove to racks to cool. Dust cooled kolacky with remaining powdered sugar.
Pecan Tarts
I don't remember which aunt made these but they would be on the cookie table at weddings and Christmas gatherings.
1 cup flour
Dash of salt
Blend together cream cheese, margarine, flour and salt. Shape into 24 balls; press each ball into 1 3/4″ muffin tins (press dough in bottom and sides with fingers, do not leave any holes).
2 eggs, beaten
1 cup brown sugar
2 Tablespoon margarine or butter, melted
1 teaspoon vanilla
Dash of salt
1 cup pecans, chopped
Coconut cream chocolates
Ingredients
- 1 jar (7 ounces) marshmallow creme
- 2-2/3 cups sweetened shredded coconut, toasted
- 1 teaspoon vanilla extract
- Dash salt
- 1 milk chocolate candy bar (5 ounces), chopped
- 1-1/2 teaspoons shortening
Directions
- In a large bowl, mix marshmallow creme, coconut, vanilla and salt until blended. Refrigerate, covered, at least 1 hour.
- Shape mixture into 1-in. balls. Place on a waxed paper-lined baking sheet. Refrigerate, covered, at least 3 hours.
- In a microwave, melt chocolate and shortening; stir until smooth. Dip coconut balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set.
Peanut butter snowballs******
1 CUP CONFECTIONER'S SUGAR
1/2 CUP PEANUT BUTTER3 TBS. BUTTER..SOFTENED
1 POUND OF WHITE CANDY COATING, COARSELY CHOPPED
CHOPPED PEANUTS , OPTIONAL
1. In a bowl,combine the sugar,peanut butter and butter.
Chill in freezer for 30 min or until easy to handle. Shape into 1in balls. Put on wax paper lined cookie sheet and freeze for 30 min.
2. Melt the candy coating...........dip the balls and then sprinkle with nuts.
Salted caramel thumbprints
Ingredients
- 1 cup (2 sticks) butter, softened
- 2/3 cup sugar
- 2 eggs
- 2 TBSP honey
- 2 tsp vanilla
- dash of salt
- 2 cups flour
- coarse sea salt, for topping
- 2 cups pretzels, broken into pieces
- 14 oz dulce de leche
Instructions
- In a mixing bowl, beat butter and sugar until fluffy. Then, add in eggs, honey and vanilla. Beat until combined. Gradually, add in flour and salt and mix until semi firm.
- Place dough in the refrigerator for 30 minutes.
- Preheat oven to 350 degrees. Line a flat rimmed baking sheet with parchment paper or mats.
- Add broken pretzels into a small bowl. Scoop dough and roll into balls about the size of a walnut. Roll dough in pretzel pieces and place on prepared baking sheet approx 1-2 in apart. Gently press your thumb in the middle of the cookie to form a small well.
